“We’re losing money somewhere” is a question. This is the answer.

The missing money gets split into six named causes, each with a venue, a shift pattern, an owner and a dollar figure. Theft is named last, deliberately, and only after everything with an innocent explanation has been measured and taken off the total.

Free-pouring and untrained closes. It concentrates on particular shifts and particular people, which is exactly why a group-wide number hides it.
