How this is worked out, and what it is not
The sum is: total revenue × the share of it sold behind the bar × the cents you win back on each of those dollars. It assumes what you recover is real cost you stop losing, not new revenue you have to go and earn.
This is illustrative math, not a customer result and not a promise. We do not publish an industry figure for how much a group typically wins back, because no credible published number exists and inventing one would be worse than useless to you. What we can tell you is where the money usually hides: drink variations nobody costed, heavy pours on late shifts, comps that were never checked against the bottles, and recipes that quietly drifted. Your first report tells you how much of each you have.
Cost assumes list price. Trace bills your first location at nothing and every location after it at $150 a month. Vision bills every location at $350 a month, with 10% off if you pay annually. A central warehouse that holds stock but does not pour drinks is free on every plan.
